    Quick Weeknight Gluten-Free Meals (30 Minutes or Less)

    These are the recipes I reach for when dinner time arrives and I haven't thought about it yet. Most use one pan, one sheet pan, or the Instant Pot. Nothing fussy.

    Gluten Free Tacos come together in twenty minutes with seasoned ground beef, a warm gluten-free tortilla, and whatever toppings are in the fridge. I keep corn tortillas in the freezer so I can make this without a grocery run.

    Instant Pot Salsa Chicken uses three ingredients and is done in under 30 minutes. Shred it for tacos, burritos, or rice bowls.

    Gluten Free Spaghetti with a from-scratch sauce is a reliable weeknight default. Dairy-free and sugar-free. Add ground beef or turkey if you want more protein.

    Gluten Free Chicken Tenders are buttermilk-marinated and breaded in a crispy gluten-free coating. Kids eat these without argument.

    Slow Cooker Gluten-Free Meals

    For the days when dinner needs to be ready at six but I'm gone all afternoon. Slow cooker meals are also my answer to feeding a crowd without standing at the stove.

    Hawaiian Crockpot Chicken uses pineapple, tamari, and brown sugar to build a sweet-savory sauce over rice.

    Slow Cooker Beef Tips work in the Crockpot or Instant Pot. Serve over rice or mashed potatoes.

    Crack Chicken Chili is a cream-cheese-based chicken chili. Simple, filling, and the leftovers reheat beautifully.

    Gluten-Free Soups, Stews & Chili

    A pot of soup stretches into multiple meals and freezes well. These are the gluten-free soup recipes I rotate through from October to April.

    Gluten Free Chicken Noodle Soup is a simple from-scratch version with minimal ingredients. Ready in under 30 minutes. Paleo option included.

    Gluten Free Tomato Soup is creamy, savory, and pairs with a grilled cheese made on gluten-free bread.

    Gluten-Free Quinoa Soup with Chicken is comforting any time of year. Quinoa adds protein and makes it filling enough to be dinner.

    Gluten Free Cream of Mushroom Soup is good on its own and also works as a replacement in casserole recipes that normally call for the canned version.

    Spicy Black Bean Soup is full of flavor, protein, and tender vegetables. Adjust the heat up or down.

    Instant Pot Chicken Fajita Soup is healthy, filling, and bursting with flavor. Top with your favorites.

    Crack Chicken Chili rounds out the chili section. Creamy, cheesy, weeknight-easy.

    Gluten-Free Breakfast

    Breakfast-for-dinner counts as dinner in my house. These breakfast recipes also cover weekend brunch, make-ahead casseroles, and quick weekday options.

    Gluten Free Crepes work sweet or savory. Minimal ingredients, dairy-free option included.

    Gluten Free Quiche has a flaky gluten-free crust and a custard filling. Use ham, sausage, bacon, or vegetables.

    Gluten Free French Toast uses thick-cut gluten-free bread soaked in a cinnamon custard. Weekend breakfast perfected.

    Gluten Free Breakfast Casserole is the make-ahead option. Assemble the night before, bake in the morning.

    Gluten Free Pancakes use a homemade mix that stores for three months. Dairy-free and vegan options included.

    Gluten Free Waffles use a similar homemade mix. Make a double batch and freeze the extras for weekday mornings.

    How I Plan Gluten-Free Meals for My Family

    Pick three proteins and build around them

    Most weeks I pick chicken, ground beef, and one other protein like fish or pork. Everything on the menu flexes off those three. Leftover roast chicken becomes chicken fried rice on Wednesday. Ground beef becomes tacos on Monday and meatballs on Thursday. This narrows the weekly planning decision to three purchases and saves me from staring into the fridge at 5:30.

    Cook once, eat twice

    Almost everything in this roundup doubles well. When I make a pot of chili, beef stew, or pasta sauce, I make enough for two dinners and freeze the second batch. Glass containers with lids go straight from freezer to oven. Freezer meals are the single biggest time-saver in a gluten-free kitchen.

    Keep a gluten-free staples pantry

    Tamari (gluten-free soy sauce), gluten-free pasta, certified gluten-free oats, rice, dried beans, canned tomatoes, coconut milk, and a 1:1 gluten-free flour blend cover most of the gluten-free recipes on this site. Stock these and you can make most of the meals above without a special trip.

    Watch the hidden gluten

    Soy sauce, worcestershire, some mustards, most bouillons, and many spice blends contain gluten. Check labels every time, even on brands you've bought before. Manufacturing changes happen. A recipe marked gluten-free online is only gluten-free if the specific ingredients you use are certified or confirmed.

    Cross-contamination in a mixed household

    If you cook with wheat for other family members, keep a separate toaster, a dedicated colander, and dedicated wooden utensils. Use separate cutting boards. Wipe the pan handles, counters, and stove knobs after cooking wheat. For anyone with celiac, a dedicated shelf in the pantry helps prevent cross-contamination from flour dust.

    Freezer meals that actually work

    Beef stew, chili, lasagna, meatballs, breakfast casserole, and pancake batter (yes, batter) all freeze well. Quiche and chicken pot pie freeze well unbaked. Dishes with gluten-free pasta mixed in tend to get mushy; freeze the sauce separately and cook fresh pasta the night you eat it.
