Working with Gluten Free Flours when Making Cookies
Unless the recipe calls for you to weight the gluten free flour on the scale, you'll want to spoon your gluten free flour into a measuring cup and then level it. Never scoop the measuring cup into the flour otherwise you may end up with too much flour.
It's always easier to add more flour than it is to take flour out of a recipe.
I talk more about gluten free flours and share my recipe for gluten free flours.
